Step 1: Thoroughly rinse your kale under cold tap water, then use a paper towel to dry it. Try and get as much of the moisture off of the leaves as possible. Once the kale is clean and dry, proceed to tear it up into small chip size pieces. Make sure that you set aside any of the tough kale stalk, as you only want to use the soft and tender leafy part.

2 Tablespoons of Extra Virgin Olive Oil
1/3 Teaspoon of Salt

Step 2: Place your bite size kale pieces into a large mixing bowl. Slowly and evenly drizzle the extra virgin olive oil on to the kale. Follow that by evenly sprinkling the salt over the vegetable. Using clean hands proceed to gently massage the oil and salt on to the kale, with the end goal being a nice even coating. Do not massage the ingredients together too vigorously, as you want the kale to remain crisp and rigid, not wilted or smashed.
Step 3: Evenly spread the oiled and salted kale chips across your dehydrator sheets. The kale chips can slightly touch one another, but do not heavily overlap any of the pieces as they will dry clumped together.
Step 4: Dehydrate the kale chips at 115 degrees F, or 46 degrees C for 4 to 6 hours. Remove the kale chips from the dehydrator once they are nice and crispy. Be sure to periodically check on them during the dehydration process just to make sure that they're drying correctly. Once done you can serve them immediately.

Storage: Store any excess kale chips in a sealable airtight container. If stored properly they will stay fresh for a full 2 weeks. Dehydrated kale chips generally stay fresh a full week longer than the baked variety.
