Step 1: The first thing you'll want to do is wash and rinse your fresh kale under cool running water. Before rinsing the kale you might want to consider spraying the vegetable with an all natural produce spray, as this will kill all soil born bacteria. Once your kale is totally clean you should shake off the water and then towel away any remaining droplets. Next, take out a knife or a sharp pair of kitchen scissors and then remove the hard inedible inner kale stems that run through the center of each leaf. With just the leafy portion remaining, cut out bite size chip like pieces.
Food Dehydrator
1/2 Teaspoon of Sea Salt
3 Tablespoons of Melted Raw Organic Coconut Butter

1 Bunch of Fresh Organic Kale
1/4 Teaspoon of Ground Organic Black Peppercorns
2 Minced Garlic Cloves
1 Tablespoon of Fresh Lemon Juice
Step 2: Now that your kale is clean and prepared, place it into a medium to large size mixing bowl. Next, take out a second smaller mixing bowl and then add into it the sea salt, melted raw organic coconut butter, ground organic black peppercorns, minced garlic cloves, and fresh lemon juice. Vigorously whisk the ingredients within the second bowl together until they're nice and even. Next, drizzle the coconut butter mixture over the kale. Using clean hands, manually stir and toss your kale until each chip piece is evenly coated with the flavoring. Make sure that you don't smash the kale during the stirring phase, as it will become wilted.
Step 3: Take out your clean food dehydrator trays and meticulously line out your evenly seasoned kale chips so that there is minimal overlap. You absolutely want to avoid stacking the kale chips on top of each other, as this will cause the chips to dry out unevenly and eventually stick together.
Step 4: Place the paleo kale chips into the food dehydrator and then dry them for 4 to 6 hours at a temperature of 115 degrees F, or 46 degrees C. I would strongly advise keeping a close eye on them while they're drying out, just to make sure that they don't end up over drying. Monitoring the chips over the last couple of hours is especially important. Once the chips are nice and crispy you can go ahead and remove them from the appliance, as they are ready to immediately serve.
Storage: Your super tasty paleo kale chips will stay fresh for 2 weeks if well stored. Put them in a sealed vessel and then store them in a dark place at room temperature, preferably in a cupboard or pantry. I generally use a glass storage vessel as opposed to a plastic one, as glass is thought to be a slightly safer storage method for food.
Health Benefits: Dehydrated kale chips are one of the healthiest snacks foods that you can eat. Kale is considered to be a superfood by most dietitians and nutritionists, as it's extremely rich in vitamin C, vitamin B6, vitamin K, vitamin A, calcium, iron, and more. Eating kale chips regularly is proven to boost the immune system, improve eyesight, and lower bad cholesterol levels. Eating kale chips often can also lower your risks of getting heart disease or cancer. Beyond the kale itself, the melted raw organic coconut butter within this recipe is healthy for your heart and cardiovascular system, as it contains good saturated fat known as medium chain triglycerides or MCTs.
