Step 1: Gently scrub and rinse your fresh bunch of kale. When scrubbing the kale you can use either your finger tips or a produce brush. Before rinsing off the kale I recommend spraying it with an all natural citric acid based produce spray, as this ensures that the kale will be completely sterile. Once your kale is fully clean proceed to dry it off using a paper towel or clean kitchen cloth. It's extremely important to dry the kale completely, otherwise the olive oil won't fully coat the leaves. Finally you will want to shred, cut, or tear your kale into chip size pieces. When preparing the chips be sure to remove any of the kale stalk as it's inedible.

Step 2: Take out a large mixing bowl and place your prepared kale chips into it. Next, take out a smaller mixing bowl and then add into it the extra virgin olive oil, sea salt, fresh lemon juice, and organic honey. Thoroughly mix together the ingredients within the small bowl using a whisk. Once the mixture is even and consistent you will then need to slowly drizzle it over the top of the kale chips. Gently stir the kale chips and honey mixture together until each piece is evenly coated. When mixing the kale chips be sure to do so gently, otherwise the kale will become soggy.
Step 3: Take out your clean dehydrator trays and neatly arrange the oiled and seasoned kale chips on them. Avoid placing any of the kale chips on top of each other as this will cause them to clump together. The kale chips can touch each other, however, only a minimal amount of overlap is recommended. Fill as many dehydrator trays as is needed to use all of the freshly prepared kale.
Step 4: Slide your kale lined dehydrator trays into the appliance. Set the dehydrator temperature to 115 degrees F, or 46 degrees C, and allow the chips to dry for 4 to 6 hours. At the fourth hour you will want to begin periodically checking on the kale chips to make sure that they're not over drying. Continue checking on the chips until they're very crispy and fully dried. Be sure to eat some of the chips while they're still warm, as they're particularly delicious straight out of the dehydrator.
Storage: Your dehydrated honey kale chips will stay fresh for up to 2 weeks if properly stored. Place them in a sealed airtight container away from any direct sunlight. The best place to store them is in a dark cupboard or pantry. You'll want to store the chips at room temperature. Do not refrigerate the kale chips as this will cause them to absorb moisture and in turn they will become soggy and inedible very quickly.
