KALE IS A GREAT SOURCE OF OMEGA-3 FATTY ACIDS
For a long time, it seemed that omega-3 fatty acids were almost entirely associated with fish and fish oil. As eating kale becomes more common, however, people are getting more complete omega-3s. Three different fats make up the group of omega-3 fatty acids. These are alpha-linolenic acid, or ALA, docosahexaenoic acid, or DHA, and eicosapentaenoic acid, or EPA. Fish and some types of seafood are high in DHA and EPA, and kale is naturally rich in ALA. Just three cups of kale can provide 25 percent of the daily recommendation for ALA consumption.
ALA can only be obtained from food and supplements; it is not created in the body. Research has found that ALA may lower the risk of cardiovascular disease and improve heart health. It can lower blood pressure and lower cholesterol levels. It has also been associated with reduced chronic inflammation, benefiting patients with rheumatoid arthritis, lupus, Crohn's disease and other autoimmune disorders. If you've been feeling moody or stressed, ALA may even help regulate your disposition; it has been used to treat depression and lower anxiety.
KALE HAS MORE CALCIUM THAN MILK
Have you been loading up on dairy products in hopes of building strong bones? Per calorie, kale has almost twice the calcium as a cup of whole milk. People who are sensitive to dairy products or who just don't like the taste of milk can get their calcium by eating kale instead. Additionally, lactose-intolerant individuals can satisfy their bodies' needs for calcium with a large bowl of kale chips. Do be sure that you are getting a sufficient amount of vitamin D in your daily diet, as it will help to maximize the absorption of the calcium in the kale.
It's a well-known fact that calcium helps build strong teeth and bones, but calcium is also responsible for encouraging the body to burn fat. Calcium is excreted through the body every day. If we don't replenish the lost calcium, the body will begin to use calcium from the bones, making them weak and brittle. While taking extremely large doses of calcium is unnecessary, keeping calcium levels steady in the body can help keep bone health in check as you age.
